According to the tavern's official history, it began operation as "a grocery and supply store sometime in the late 1920’s to early 30’s" and eventually became a gathering place for those who hunted or fished in what is now the [[Cordova Park]] area. Its history as a bar is dated from [[1935]], when Wisteria was issued a "beer only" liquor license by the State of Florida.
Over the years, the Wisteria has housed food trucks outside of the bar. Until 2022, the Brown Bagger burger truck was parked outside the Wisteria. In 2022, the What The Cluck chicken truck has taken over Brown Bagger's spot, since Brown Bagger has moved behind the Alga Brewery, also in the East Hill district.
